Ingredients
  

  • 1 lb brioche or challah bread, cut into 1-inch cubes
  • 2 to 3 cups fresh mixed berries (blueberries, raspberries, strawberries)
  • 6 large eggs, room temperature
  • 1.5 cups whole milk
  • 0.5 cup heavy cream
  • 0.25 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamo
  • Maple syrup for serving

Method
 

  1. Grease a 9x13 inch baking pan with butter or non-stick spray.
  2. Cut the bread into uniform 1-inch cubes and let them dry out slightly if fresh.
  3. Scatter half of the bread cubes in the prepared pan.
  4. Wash and dry the berries, then sprinkle half over the first layer of bread.
  5. Add the remaining bread cubes on top, followed by the rest of the berries.
  6. In a large bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla, and cinnamon.
  7. Pour the egg mixture over the bread and berries, pressing down gently to soak.
  8. Cover and refrigerate for at least 4 hours or overnight, or let sit for 20 minutes if baking immediately.
  9. Preheat the oven to 350°F and bake for 45 to 55 minutes until golden brown and set.
  10. Let rest for 10 minutes before serving.

Notes

Use stale bread for best results. You can make this dish ahead of time and refrigerate overnight.
