Method
- Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Grease a 2-quart baking dish or an 8x8 inch square pan.
- In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt.
- In a medium bowl, whisk together the milk, egg, maple syrup, melted butter, and vanilla extract.
- Pour the wet ingredients over the dry oat mixture and stir gently until just combined. Fold in half of the sliced strawberries.
- Pour the mixture into the prepared baking dish and spread it out evenly. Scatter the remaining strawberries on top.
- If using nuts, sprinkle them over the top. Bake for 35 to 40 minutes until the top is golden brown and the oats have set.
- Let it cool for 5 to 10 minutes before slicing and serving.
Notes
Use certified gluten-free oats if needed. For a vegan option, substitute the egg with a flax egg. This recipe can be made ahead of time and stored in the refrigerator for up to five days.
