Ingredients
  

  • 2 cups rolled oats
  • 2 cups fresh strawberries, sliced or diced
  • 2 cups milk (dairy or plant-based)
  • 1 large egg
  • 1/3 cup maple syrup
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamo
  • 1/2 teaspoon salt
  • 1/4 cup walnuts or pecans (optional)

Method
 

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Grease a 2-quart baking dish or an 8x8 inch square pan.
  2. In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt.
  3. In a medium bowl, whisk together the milk, egg, maple syrup, melted butter, and vanilla extract.
  4. Pour the wet ingredients over the dry oat mixture and stir gently until just combined. Fold in half of the sliced strawberries.
  5. Pour the mixture into the prepared baking dish and spread it out evenly. Scatter the remaining strawberries on top.
  6. If using nuts, sprinkle them over the top. Bake for 35 to 40 minutes until the top is golden brown and the oats have set.
  7. Let it cool for 5 to 10 minutes before slicing and serving.

Notes

Use certified gluten-free oats if needed. For a vegan option, substitute the egg with a flax egg. This recipe can be made ahead of time and stored in the refrigerator for up to five days.
