Ingredients
  

  • 1.5 lbs Ground Beef
  • 1 medium Yellow Onion, finely diced
  • 1 medium Green Bell Pepper, seeded and diced
  • 3 cloves Garlic, minced fresh
  • 1 cup Ketchup
  • 2 tablespoons Brown Sugar, packed
  • 1 tablespoon Yellow Mustard
  • 1 tablespoon Worcestershire Sauce
  • 12 oz Rotini or Manicotti Pasta, cooked al dente
  • 2 cups Cheddar Cheese, shredded
  • Salt and Black Pepper, to taste

Method
 

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. Bring a large pot of salted water to a boil. Cook your pasta according to the package directions, but stop two minutes early.
  3. While the pasta boils, place a large skillet over medium-high heat. Add the ground beef and cook until it is no longer pink.
  4. Drain any excess grease from the skillet, leaving just a teaspoon for flavor.
  5. Add the diced onions and bell peppers to the skillet with the beef. Sauté for about 5 minutes until the vegetables soften.
  6. Stir in the minced garlic and cook for one additional minute until fragrant.
  7. Lower the heat to medium and stir in the ketchup, brown sugar, mustard, and Worcestershire sauce. Mix thoroughly.
  8. Let the sauce simmer for 5 to 7 minutes.
  9. Drain the pasta and toss it into the skillet with the meat sauce.
  10. Transfer the mixture into your prepared baking dish and spread it out evenly.
  11. Sprinkle the shredded cheddar cheese generously over the top.
  12. Bake in the preheated oven for 20 to 25 minutes until the cheese is melted and bubbling.
  13. For a golden finish, broil the casserole for the last 2 minutes.
  14. Remove from the oven and let it rest for 5 minutes before serving.

Notes

Ensure to drain the fat after browning the meat to avoid a greasy casserole. Cook pasta to al dente as it will absorb moisture while baking.
