- Pat chicken pieces dry with a paper towel and toss with half of the salt, pepper, paprika, and oregano.
- Heat a large skillet over medium-high heat and add one tablespoon of olive oil. Once shimmering, add chicken in a single layer and cook for 5 to 7 minutes until golden brown. Remove chicken and set aside.
- In the same skillet, add the remaining tablespoon of olive oil and sauté sliced onions and bell peppers for 6 to 8 minutes until softened and lightly charred.
- Stir in minced garlic and remaining spices, cooking for 1 minute until fragrant.
- Return cooked chicken and any juices to the skillet, tossing everything together for 2 minutes to meld flavors.
- Remove from heat, garnish with fresh parsley, and serve immediately.
Notes
Use a large skillet for even cooking. Ensure chicken pieces are similar in size for consistent cooking. Taste before serving and adjust seasoning as needed.
