Ingredients
  

  • 1.5 lbs Chicken Breast, cut into 1-inch bite-sized pieces
  • 3 large Bell Peppers, sliced into strips (mix of red, yellow, and green)
  • 1 medium Yellow Onion, thinly sliced into half-moons
  • 4 cloves Garlic, freshly minced
  • 2 tbsp Olive Oil, high-quality extra virgi
  • 1 tsp Smoked Paprika
  • 1 tsp Dried Oregano
  • Salt and Black Pepper, to taste
  • 1/2 tsp Red Pepper Flakes, optional
  • 2 tbsp Fresh Parsley, chopped

Method
 

  1. Pat chicken pieces dry with a paper towel and toss with half of the salt, pepper, paprika, and oregano.
  2. Heat a large skillet over medium-high heat and add one tablespoon of olive oil. Once shimmering, add chicken in a single layer and cook for 5 to 7 minutes until golden brown. Remove chicken and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil and sauté sliced onions and bell peppers for 6 to 8 minutes until softened and lightly charred.
  4. Stir in minced garlic and remaining spices, cooking for 1 minute until fragrant.
  5. Return cooked chicken and any juices to the skillet, tossing everything together for 2 minutes to meld flavors.
  6. Remove from heat, garnish with fresh parsley, and serve immediately.

Notes

Use a large skillet for even cooking. Ensure chicken pieces are similar in size for consistent cooking. Taste before serving and adjust seasoning as needed.
