Ingredients
  

  • 2 lbs bone-in, skin-on chicken thighs
  • 3 tablespoons za'atar spice blend
  • 1/4 cup extra virgin olive oil
  • 2 large lemons
  • 4 cloves garlic, minced
  • 1 lb Yukon Gold potatoes, cut into 1-inch cubes
  • 1 large red onion, cut into thick wedges
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped for garnish

Method
 

  1. Preheat your oven to 425 degrees Fahrenheit.
  2. In a small bowl, whisk together the olive oil, za'atar spice, lemon juice, minced garlic, salt, and pepper.
  3. Place the chicken thighs in a large bowl and pour half of the marinade over them. Massage the spices into the meat.
  4. Prepare your vegetables by placing the cubed potatoes and red onion wedges on a large baking sheet. Pour the remaining marinade over the vegetables and toss until evenly coated.
  5. Spread the vegetables into a single layer and nestle the marinated chicken thighs among them. Arrange lemon slices on top.
  6. Roast in the oven for 35 to 45 minutes until the chicken reaches an internal temperature of 165 degrees Fahrenheit and the skin is brown and crisp.
  7. Let the dish rest for five minutes before garnishing with fresh parsley and serving.

Notes

Pat chicken dry before marinating for crispier skin. Marinate for 30 minutes for enhanced flavor. Use a large enough sheet pan to avoid crowding.
