Ingredients
  

  • 1.5 lbs Chicken Breasts, sliced into thin strips
  • 3 large Bell Peppers, a mix of red, yellow, and orange
  • 1 medium Red Onion, sliced into wedges or strips
  • 3 tablespoons Olive Oil
  • 2 tablespoons Lime Juice, freshly squeezed
  • 1 tablespoon Chili Powder
  • 1 teaspoon Cumi
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Smoked Paprika
  • Salt & Pepper to taste

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Slice chicken breasts, bell peppers, and onions into similar sizes and place in a large mixing bowl.
  3. Drizzle olive oil and lime juice over the mixture, then sprinkle with chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Toss until well coated.
  4. Lightly grease a large rimmed baking sheet and spread the mixture in a single layer.
  5. Roast in the oven for 18 to 22 minutes, tossing halfway through.
  6. Optional: Broil on high for the last 2 minutes for extra char.
  7. Serve immediately with warm tortillas and toppings.

Notes

Always dry chicken before seasoning to ensure proper browning. Use a large enough baking sheet to avoid overcrowding.
