Ingredients

  • 1 large head of cauliflower
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 lemon, cut into wedges

Method

  1. Preheat your oven to 400 degrees Fahrenheit and line a large rimmed baking sheet with parchment paper.
  2. Remove the green outer leaves from the cauliflower head and trim the bottom of the stem, keeping the core intact.
  3. Slice the cauliflower in half through the center and cut 1-inch thick 'steaks' from the center of each half.
  4. In a small bowl, whisk together the olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  5. Place the cauliflower steaks on the prepared baking sheet and brush both sides with the seasoned oil mixture.
  6. Roast the steaks for 15 to 20 minutes, then carefully flip them and roast for another 15 minutes until tender and golden brown.
  7. Remove from the oven and garnish with fresh parsley and a squeeze of lemon juice.

Notes

Ensure not to crowd the baking sheet to achieve crispy edges. Use a sharp knife for clean cuts and handle the steaks gently when flipping.
