- Preheat your oven to 400 degrees Fahrenheit.
- Line a large rimmed baking sheet with parchment paper or aluminum foil.
- Pat the chicken breasts dry with paper towels and place them in the center of the pan.
- Surround the chicken with cherry tomatoes and minced garlic.
- Drizzle olive oil over everything and sprinkle with Italian seasoning, salt, and pepper.
- Toss the ingredients until evenly coated and spread them out in a single layer.
- Roast in the oven for about 15 to 20 minutes, until the chicken reaches an internal temperature of 160 degrees Fahrenheit.
- Remove from the oven and top each chicken breast with fresh mozzarella.
- Return to the oven for another 3 to 5 minutes until the cheese is melted and bubbly.
- Let it rest for a few minutes, then scatter fresh basil leaves and drizzle with balsamic glaze before serving.
Notes
Ensure not to crowd the pan to avoid steaming. Use chicken breasts of similar size for even cooking. Add fresh basil at the end to preserve its flavor.
