Ingredients
  

  • 8-10 cups stale bread (sourdough or French), cut into 1-inch cubes
  • 6 large eggs, room temperature preferred
  • 2 cups whole milk
  • 1 cup heavy cream
  • 4 tablespoons unsalted butter
  • 1 medium yellow onion, finely diced
  • 3 garlic cloves, minced finely
  • 2 cups shredded Gruyere or sharp cheddar, divided
  • 2 tablespoons fresh thyme and rosemary, chopped finely
  • Salt and black pepper to taste
  • 2 cups fresh spinach or kale, roughly chopped

Method
 

  1. Prepare the Bread: Cut the bread into 1-inch cubes and toast in a 350°F oven for about 10 minutes if fresh.
  2. Sauté the Aromatics: Melt butter in a skillet, add onions, cook until translucent, then add garlic and herbs, cooking until fragrant. Add spinach or kale and cook until wilted.
  3. Whisk the Custard: In a bowl, whisk eggs, then add milk and cream while whisking. Season with salt and pepper.
  4. Combine Ingredients: Place toasted bread in a bowl, add onion mixture and 1.5 cups of cheese, and toss gently.
  5. Soak the Mixture: Pour custard over bread, press down to submerge, and let sit for at least 30 minutes.
  6. Bake the Dish: Preheat oven to 375°F, grease a baking dish, transfer mixture, sprinkle remaining cheese, cover with foil, and bake for 20 minutes.
  7. Finish and Brown: Remove foil and bake for another 20-25 minutes until golden brown and set.
  8. Rest and Serve: Let rest for 10 minutes before slicing.

Ensure to use stale or toasted bread for the best texture. Let the mixture soak for several hours or overnight for enhanced flavor.
