Ingredients
  

  • 2 lbs Yukon Gold Potatoes, cut into 1-inch cubes
  • 1 lb Fresh Green Beans, trimmed and halved
  • 1/4 cup Extra Virgin Olive Oil
  • 4 cloves Garlic, minced or pressed
  • 1 tbsp Fresh Rosemary, finely chopped
  • 1 tsp Fresh Thyme, leaves stripped from stem
  • 1/2 cup Parmesan Cheese, freshly grated
  • 1 tsp Salt, adjust to your preference
  • 1/2 tsp Black Pepper, freshly cracked
  • 1/4 tsp Red Pepper Flakes, optional

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Prepare your baking dish by lightly greasing it with olive oil.
  3. Wash and scrub your potatoes thoroughly, then cut them into uniform one-inch cubes.
  4. Trim the ends of your fresh green beans and cut them into two-inch pieces.
  5. In a large mixing bowl, combine the potato cubes, green beans, minced garlic, olive oil, rosemary, thyme, salt, pepper, and red pepper flakes. Toss until evenly coated.
  6. Spread the vegetable mixture into your prepared baking dish in a single layer.
  7. Place the dish in the center rack of the oven and bake for approximately 25 to 30 minutes.
  8. Remove the dish from the oven and carefully toss the vegetables using a spatula.
  9. Sprinkle the freshly grated Parmesan cheese evenly over the top.
  10. Return the dish to the oven and bake for an additional 10 to 15 minutes until the potatoes are fork-tender and the cheese has melted.
  11. Let the Potato and Green Bean Bake rest for five minutes before serving.

Notes

Ensure potatoes are dry before tossing with oil to achieve crispiness. Use fresh herbs for best flavor. Leftovers can be stored in an airtight container in the refrigerator for up to four days.
