Ingredients
  

  • 4 cups fresh peaches, sliced
  • 2 cups fresh blueberries
  • 1/3 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 2/3 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon cinnamo
  • 1/4 teaspoon salt

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. Combine sliced peaches and blueberries in a large bowl. Add granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss gently until coated.
  3. Pour the fruit mixture into the prepared baking dish, spreading it evenly.
  4. In another bowl, mix flour, oats, brown sugar, cinnamon, and salt. Pour melted butter over the mixture and combine until it resembles coarse crumbs.
  5. Sprinkle the topping evenly over the fruit layer.
  6. Bake for 40-45 minutes until the topping is golden brown and the fruit is bubbling.
  7. Remove from the oven and let it cool for 10-15 minutes before serving.

Notes

Use ripe but firm peaches for best results. Frozen fruit can be used if fresh is unavailable. Adjust sugar based on the sweetness of the fruit.
