Ingredients
  

  • 2 cups Old-Fashioned Rolled Oats
  • 2 cups Fresh Peaches, diced
  • 1.5 cups Milk (dairy or non-dairy)
  • 2 Large Eggs
  • 1/3 cup Maple Syrup
  • 3 tablespoons Melted Butter
  • 1 teaspoon Baking Powder
  • 1 teaspoon Ground Cinnamo
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Salt
  • 1/4 cup Chopped Pecans (optional)

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish.
  2. In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and salt.
  3. In a separate bowl, whisk together the milk, eggs, maple syrup, melted butter, and vanilla extract.
  4. Gently fold half of the diced peaches into the dry oat mixture.
  5. Pour the wet ingredients over the oats and stir until well combined.
  6. Transfer the mixture into the prepared baking dish and spread it evenly.
  7. Scatter the remaining peaches over the top and sprinkle with pecans if using.
  8. Bake for 35 to 45 minutes until the center is set and the edges are golden brown.
  9. Let it cool for 5 to 10 minutes before slicing and serving.

Notes

Use certified gluten-free oats if necessary. For a vegan version, substitute eggs with flax eggs and use plant-based milk.
