Method
- Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish.
- In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and salt.
- In a separate bowl, whisk together the milk, eggs, maple syrup, melted butter, and vanilla extract.
- Gently fold half of the diced peaches into the dry oat mixture.
- Pour the wet ingredients over the oats and stir until well combined.
- Transfer the mixture into the prepared baking dish and spread it evenly.
- Scatter the remaining peaches over the top and sprinkle with pecans if using.
- Bake for 35 to 45 minutes until the center is set and the edges are golden brown.
- Let it cool for 5 to 10 minutes before slicing and serving.
Notes
Use certified gluten-free oats if necessary. For a vegan version, substitute eggs with flax eggs and use plant-based milk.
