Ingredients
  

  • 3 medium zucchini, sliced into 1/4 inch rounds
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced finely
  • 1.5 cups marinara sauce
  • 1 cup mozzarella cheese, shredded or fresh pearls
  • 1/2 cup parmesan cheese, grated or shredded
  • 1/4 cup panko breadcrumbs
  • 1 teaspoon Italian seasoning
  • Salt & black pepper to taste
  • 1/4 cup fresh basil, torn for garnish

Method
 

  1. Prepare zucchini by washing and slicing into uniform rounds.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat.
  3. Sauté zucchini rounds for about 3-4 minutes per side until golden brown.
  4. Add minced garlic and stir for 30 seconds until fragrant.
  5. Pour marinara sauce over zucchini and toss to coat evenly.
  6. Reduce heat to low and let simmer for 2 minutes.
  7. Sprinkle Italian seasoning, salt, and pepper over the top.
  8. Distribute mozzarella and parmesan cheese evenly across the surface.
  9. Sprinkle panko breadcrumbs over the cheese.
  10. Broil for 2-3 minutes until cheese bubbles and breadcrumbs are golden brown.
  11. Let rest for 5 minutes, garnish with fresh basil, and serve.

Notes

Do not overcook zucchini during sautéing to prevent mushiness. Use an oven-safe skillet for easy broiling.
