- Preheat your oven to 400 degrees Fahrenheit.
- Pat the chicken skin completely dry with paper towels and season both sides with salt and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Place the chicken thighs in the pan, skin-side down, and sear for about 5-7 minutes until golden brown.
- Flip the chicken and move it to a plate temporarily.
- Reduce heat to medium, add butter to the skillet, and once melted, add garlic and herbs, sautéing for about one minute.
- Pour in chicken broth and lemon juice, scraping the bottom of the pan to deglaze.
- Place the chicken thighs back into the skillet, nestled among the lemon slices.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes until the internal temperature reaches 165 degrees Fahrenheit.
- Remove from the oven and let the chicken rest for five minutes before serving.
Notes
Ensure the chicken skin is dry for crispy results. Use a cast-iron skillet for best heat retention. Adjust seasoning to taste.
