Ingredients
  

  • 6-8 pieces bone-in, skin-on chicken thighs
  • 2 large fresh lemons, zested and sliced into rounds
  • 6-8 cloves garlic, smashed or minced
  • 2 tablespoons high quality extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 4-5 sprigs fresh thyme or 1 teaspoon dried thyme
  • 2 sprigs fresh rosemary, finely chopped
  • 1/2 cup low sodium chicken broth
  • Kosher salt and freshly cracked pepper to taste

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Pat the chicken skin completely dry with paper towels and season both sides with salt and pepper.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat.
  4. Place the chicken thighs in the pan, skin-side down, and sear for about 5-7 minutes until golden brown.
  5. Flip the chicken and move it to a plate temporarily.
  6. Reduce heat to medium, add butter to the skillet, and once melted, add garlic and herbs, sautéing for about one minute.
  7. Pour in chicken broth and lemon juice, scraping the bottom of the pan to deglaze.
  8. Place the chicken thighs back into the skillet, nestled among the lemon slices.
  9. Transfer the skillet to the preheated oven and bake for 15-20 minutes until the internal temperature reaches 165 degrees Fahrenheit.
  10. Remove from the oven and let the chicken rest for five minutes before serving.

Notes

Ensure the chicken skin is dry for crispy results. Use a cast-iron skillet for best heat retention. Adjust seasoning to taste.
