Method
- Preheat your oven to 400 degrees Fahrenheit.
- Prepare a large rimmed baking sheet, optionally lining it with parchment paper.
- In a small bowl, whisk together honey, Dijon mustard, whole grain mustard, minced garlic, and 1 tablespoon of olive oil. Season with salt and pepper.
- Place chicken thighs on the baking sheet and pat them dry. Season both sides with salt and pepper.
- Arrange potatoes around the chicken and drizzle with remaining olive oil, tossing to coat.
- Pour half of the honey mustard sauce over the chicken and spread it evenly.
- Bake for about 20 minutes, then add green beans to the sheet and drizzle with remaining sauce.
- Return to the oven for another 15 to 20 minutes until chicken reaches 165 degrees Fahrenheit.
- Let the chicken rest for 5 minutes before serving, then garnish with fresh parsley.
Notes
Use a meat thermometer for best results. Do not crowd the baking sheet to ensure proper roasting. Cut potatoes into uniform sizes for even cooking.
