Ingredients
  

  • 6 to 8 pieces chicken thighs, bone-in, skin-o
  • 1/3 cup honey
  • 3 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 pound red potatoes, halved or quartered
  • 12 ounces green beans, trimmed and cleaned
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped for garnish

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Prepare a large rimmed baking sheet, optionally lining it with parchment paper.
  3. In a small bowl, whisk together honey, Dijon mustard, whole grain mustard, minced garlic, and 1 tablespoon of olive oil. Season with salt and pepper.
  4. Place chicken thighs on the baking sheet and pat them dry. Season both sides with salt and pepper.
  5. Arrange potatoes around the chicken and drizzle with remaining olive oil, tossing to coat.
  6. Pour half of the honey mustard sauce over the chicken and spread it evenly.
  7. Bake for about 20 minutes, then add green beans to the sheet and drizzle with remaining sauce.
  8. Return to the oven for another 15 to 20 minutes until chicken reaches 165 degrees Fahrenheit.
  9. Let the chicken rest for 5 minutes before serving, then garnish with fresh parsley.

Notes

Use a meat thermometer for best results. Do not crowd the baking sheet to ensure proper roasting. Cut potatoes into uniform sizes for even cooking.
