- In a small bowl, combine the rinsed black beans, cumin, garlic powder, salt, and pepper. Mash about one-third of the beans.
- Heat a large skillet over medium heat and add one tablespoon of olive oil or butter.
- Place one tortilla in the skillet and sprinkle a layer of blended cheeses over it.
- Spread half of the bean mixture over one half of the tortilla and fold it over.
- Cook for about three minutes until golden brown, then flip and cook for another two to three minutes until cheese is melted.
- Repeat with remaining tortillas and filling, adding more oil if needed.
- Let the quesadillas rest for one minute before slicing and serve immediately.
Notes
Ensure beans are well-drained to prevent sogginess. Use a heavy-bottomed skillet for even cooking.
