Method
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Line a large rimmed baking sheet with parchment paper or aluminum foil.
- In a large mixing bowl, toss the diced potatoes and red onion wedges with 2 tablespoons of olive oil, salt, pepper, and half of the garlic powder. Spread them out in a single layer on the baking sheet.
- Pat the chicken thighs dry with paper towels. Rub the remaining olive oil, smoked paprika, garlic powder, salt, and pepper all over the chicken.
- Nestle the chicken pieces among the vegetables on the tray.
- Place the tray in the oven and bake for 20 minutes.
- After 20 minutes, remove the tray from the oven. Add the broccoli florets to the pan, tossing them slightly in the rendered chicken fat and juices.
- Brush each piece of chicken generously with barbecue sauce.
- Return the pan to the oven and bake for another 15 to 20 minutes until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
- During the last 5 minutes of cooking, apply another layer of BBQ sauce for a thicker glaze.
- Let the One Pan BBQ Chicken rest for five minutes before serving.
Notes
Ensure not to crowd the pan for even roasting. Pat the chicken dry for crispy skin. Use a meat thermometer to check doneness.
