Ingredients
  

  • 2 lbs bone-in, skin-on chicken thighs
  • 1 cup barbecue sauce
  • 1 lb red potatoes, diced into 1-inch cubes
  • 2 cups broccoli florets
  • 1 medium red onion, cut into thick wedges
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Line a large rimmed baking sheet with parchment paper or aluminum foil.
  3. In a large mixing bowl, toss the diced potatoes and red onion wedges with 2 tablespoons of olive oil, salt, pepper, and half of the garlic powder. Spread them out in a single layer on the baking sheet.
  4. Pat the chicken thighs dry with paper towels. Rub the remaining olive oil, smoked paprika, garlic powder, salt, and pepper all over the chicken.
  5. Nestle the chicken pieces among the vegetables on the tray.
  6. Place the tray in the oven and bake for 20 minutes.
  7. After 20 minutes, remove the tray from the oven. Add the broccoli florets to the pan, tossing them slightly in the rendered chicken fat and juices.
  8. Brush each piece of chicken generously with barbecue sauce.
  9. Return the pan to the oven and bake for another 15 to 20 minutes until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  10. During the last 5 minutes of cooking, apply another layer of BBQ sauce for a thicker glaze.
  11. Let the One Pan BBQ Chicken rest for five minutes before serving.

Notes

Ensure not to crowd the pan for even roasting. Pat the chicken dry for crispy skin. Use a meat thermometer to check doneness.
