- Preheat your oven to 400 degrees Fahrenheit.
- Line a large, rimmed baking sheet with parchment paper or aluminum foil.
- Pat each piece of chicken dry with a paper towel and place in a large mixing bowl.
- Add half of the olive oil, half of the garlic, and half of the salt and pepper to the chicken and toss until coated.
- In another bowl, place the halved potatoes and trimmed green beans, drizzle with remaining olive oil, and add the rest of the garlic, rosemary, thyme, and smoked paprika. Toss well.
- Arrange the potatoes and green beans on the prepared baking sheet, leaving space for the chicken.
- Place the seasoned chicken thighs on the pan, skin side up, and tuck lemon slices around the chicken and vegetables.
- Bake for 30 to 35 minutes, checking the internal temperature of the chicken to reach 165 degrees Fahrenheit.
- Remove from the oven and let rest for five minutes before serving.
Notes
Ensure chicken skin is dry for crispiness. Use a large baking sheet to prevent crowding. Adjust vegetable sizes for even cooking.
