Ingredients
  

  • 4 to 6 pieces bone-in, skin-on chicken thighs
  • 1 pound baby gold potatoes, halved or quartered
  • 12 ounces fresh green beans, trimmed ends
  • 3 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced or pressed
  • 2 sprigs fresh rosemary, chopped finely
  • 1 teaspoon fresh thyme, leaves removed from stem
  • 1 whole lemon, sliced into rounds
  • 1.5 teaspoons kosher salt, adjust to preference
  • 1 teaspoon black pepper, freshly cracked
  • 1/2 teaspoon smoked paprika

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Line a large, rimmed baking sheet with parchment paper or aluminum foil.
  3. Pat each piece of chicken dry with a paper towel and place in a large mixing bowl.
  4. Add half of the olive oil, half of the garlic, and half of the salt and pepper to the chicken and toss until coated.
  5. In another bowl, place the halved potatoes and trimmed green beans, drizzle with remaining olive oil, and add the rest of the garlic, rosemary, thyme, and smoked paprika. Toss well.
  6. Arrange the potatoes and green beans on the prepared baking sheet, leaving space for the chicken.
  7. Place the seasoned chicken thighs on the pan, skin side up, and tuck lemon slices around the chicken and vegetables.
  8. Bake for 30 to 35 minutes, checking the internal temperature of the chicken to reach 165 degrees Fahrenheit.
  9. Remove from the oven and let rest for five minutes before serving.

Notes

Ensure chicken skin is dry for crispiness. Use a large baking sheet to prevent crowding. Adjust vegetable sizes for even cooking.
