Ingredients
  

  • 1.5 lbs Ground Beef (lean or 80/20 blend)
  • 16 oz Short Pasta (Rotini, Penne, or Fusilli)
  • 1 medium Yellow Onion (finely diced)
  • 3 cloves Garlic (minced fresh)
  • 24 oz Tomato Sauce (your favorite marinara or plain sauce)
  • 2 cups Cheddar Cheese (shredded, sharp or mild)
  • 1 tbsp Italian Seasoning (a blend of dried herbs)
  • Salt & Pepper (to taste)
  • 1 tbsp Olive Oil (for sautéing)

Method
 

  1. Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  2. Bring a large pot of salted water to a boil, add pasta, and cook according to package directions, stopping 2 minutes early.
  3. Drain the pasta and set aside.
  4. In a large skillet over medium-high heat, add olive oil and sauté diced onions until translucent.
  5. Add ground beef, breaking it into small crumbles, and cook until no pink remains. Drain excess fat.
  6. Add minced garlic and cook for another minute, then pour in tomato sauce and Italian seasoning, simmer for 5 minutes.
  7. Combine cooked pasta and meat sauce in the skillet, stirring until well mixed. Season with salt and pepper.
  8. Pour half of the mixture into the prepared baking dish, sprinkle with 1 cup of cheddar cheese, add remaining mixture, and top with the rest of the cheese.
  9. Bake for 20 to 25 minutes until cheese is bubbly and golden brown. Let rest for 5 minutes before serving.

Notes

Always salt your pasta water generously. Do not overcook the pasta; aim for 'al dente'. Grate your own cheese for a creamier texture.
