Ingredients
  

  • 12 large eggs
  • 1 cup whole milk
  • 2 cups smoked ham, diced
  • 1 medium green bell pepper, diced
  • 1 medium red bell pepper, diced
  • 1 small yellow onion, finely chopped
  • 2 cups cheddar cheese, shredded
  • 1 tablespoon unsalted butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Grease a 9x13 inch baking dish with butter or non-stick spray.
  3. Melt the butter in a medium skillet over medium heat and sauté the onions and bell peppers for 5 to 7 minutes until softened.
  4. In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until fully combined.
  5. Stir in the diced ham and half of the cheddar cheese, then add the sautéed vegetables.
  6. Pour the mixture into the prepared baking dish and sprinkle the remaining cheese on top.
  7. Bake for 25 to 30 minutes until the center is set and edges are golden brown.
  8. Let it rest for 5 minutes before slicing.

Notes

Use room temperature eggs for best results. Avoid overcooking to maintain a light texture. Store leftovers in an airtight container for up to four days.
