- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a 9x13 inch baking dish with olive oil or non-stick spray.
- Place the bite-sized chicken pieces into a large mixing bowl. Add the olive oil, minced garlic, Italian seasoning, salt, and pepper. Toss everything together until the chicken is evenly coated.
- Transfer the seasoned chicken into the prepared baking dish. Spread it out in an even layer.
- Scatter the halved cherry tomatoes over the chicken.
- Bake the Chicken Caprese Casserole in the preheated oven for about 20 minutes.
- Remove the dish from the oven. Arrange the fresh mozzarella slices or pearls over the top.
- Return the Chicken Caprese Casserole to the oven for another 8 to 10 minutes until the cheese is melted and bubbly.
- Let it rest for 5 minutes, then sprinkle fresh basil over the top.
- Drizzle the balsamic glaze over the casserole just before serving.
