Ingredients
  

  • 2 lbs Chicken Breasts, boneless, skinless, cut into bite-sized pieces
  • 8 oz Fresh Mozzarella, sliced or small pearls
  • 2 cups Cherry Tomatoes, halved
  • 1/2 cup Fresh Basil, chiffonade or roughly chopped
  • 4 cloves Garlic, minced finely
  • 2 tbsp Olive Oil, extra virgin preferred
  • 3 tbsp Balsamic Glaze, for drizzling at the end
  • 1 tsp Italian Seasoning, dried blend
  • Salt and Pepper, to taste

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a 9x13 inch baking dish with olive oil or non-stick spray.
  2. Place the bite-sized chicken pieces into a large mixing bowl. Add the olive oil, minced garlic, Italian seasoning, salt, and pepper. Toss everything together until the chicken is evenly coated.
  3. Transfer the seasoned chicken into the prepared baking dish. Spread it out in an even layer.
  4. Scatter the halved cherry tomatoes over the chicken.
  5. Bake the Chicken Caprese Casserole in the preheated oven for about 20 minutes.
  6. Remove the dish from the oven. Arrange the fresh mozzarella slices or pearls over the top.
  7. Return the Chicken Caprese Casserole to the oven for another 8 to 10 minutes until the cheese is melted and bubbly.
  8. Let it rest for 5 minutes, then sprinkle fresh basil over the top.
  9. Drizzle the balsamic glaze over the casserole just before serving.

Notes

Always pat your chicken dry before seasoning. Do not overcook the chicken; check for an internal temperature of 165 degrees Fahrenheit. Use high-quality balsamic glaze for the best flavor. Add fresh basil after baking to maintain its vibrant flavor.
