- Preheat your oven to 375 degrees Fahrenheit.
- Grease a 9x13 inch baking dish with butter or non-stick cooking spray.
- In a large skillet over medium-high heat, cook the ground sausage and diced onions until the sausage is fully browned and the onions are translucent.
- Drain the excess grease from the skillet.
- In a large mixing bowl, combine the cooked sausage and onions with the frozen hashbrowns, sour cream, cream of mushroom soup, garlic powder, and smoked paprika. Stir until well incorporated.
- Fold in two cups of the shredded cheddar cheese and spread the mixture evenly into the prepared baking dish.
- Sprinkle the remaining cheddar and mozzarella cheese over the top.
- Cover the pan with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 to 20 minutes until the edges are crispy and the center is hot.
- Let the dish rest for about 10 minutes before serving.
Notes
Use freshly grated cheese for better texture and flavor. Ensure frozen hashbrowns are slightly thawed for even distribution. For a crispy top, consider adding crushed cornflakes or panko breadcrumbs mixed with melted butter.
