Ingredients
  

  • 1.5 lbs Ground Sausage (Italian or Breakfast style)
  • 30 oz Frozen Hashbrowns (Shredded or cubed)
  • 3 cups Sharp Cheddar Cheese (Freshly grated is best)
  • 1 cup Mozzarella Cheese (For extra creaminess)
  • 1 cup Sour Cream (Full fat for best flavor)
  • 10.5 oz Cream of Mushroom Soup (Can substitute chicken or celery)
  • 1 medium Yellow Onion (Finely diced)
  • 1 tsp Garlic Powder (Adds depth to the sausage)
  • 1/2 tsp Smoked Paprika (For a hint of smokiness)
  • Salt and Black Pepper (To taste)

Method
 

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Grease a 9x13 inch baking dish with butter or non-stick cooking spray.
  3. In a large skillet over medium-high heat, cook the ground sausage and diced onions until the sausage is fully browned and the onions are translucent.
  4. Drain the excess grease from the skillet.
  5. In a large mixing bowl, combine the cooked sausage and onions with the frozen hashbrowns, sour cream, cream of mushroom soup, garlic powder, and smoked paprika. Stir until well incorporated.
  6. Fold in two cups of the shredded cheddar cheese and spread the mixture evenly into the prepared baking dish.
  7. Sprinkle the remaining cheddar and mozzarella cheese over the top.
  8. Cover the pan with aluminum foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 15 to 20 minutes until the edges are crispy and the center is hot.
  10. Let the dish rest for about 10 minutes before serving.

Notes

Use freshly grated cheese for better texture and flavor. Ensure frozen hashbrowns are slightly thawed for even distribution. For a crispy top, consider adding crushed cornflakes or panko breadcrumbs mixed with melted butter.
