Method
- Preheat your oven to 400 degrees Fahrenheit.
- Lightly grease a baking dish with olive oil.
- Pat the chicken breasts dry and season both sides with salt, pepper, and garlic powder.
- Place the seasoned chicken in a single layer in the prepared baking dish.
- Spread a thin layer of basil pesto over each chicken breast.
- Arrange the halved cherry tomatoes around and on top of the chicken.
- Drizzle the remaining olive oil over the tomatoes.
- Bake for approximately 20 to 25 minutes until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
- Remove from the oven and place a thick slice of fresh mozzarella on each piece of chicken.
- Return to the oven for another 3 to 5 minutes until the cheese melts.
- Let it rest for 5 minutes, then drizzle with balsamic glaze and garnish with fresh basil before serving.
Notes
Use high-quality balsamic vinegar for the best flavor. Ensure chicken is of uniform thickness for even cooking.
