Ingredients
  

  • 1.5 lbs Boneless Skinless Chicken Breasts
  • 8 oz Fresh Mozzarella Cheese, sliced into thick rounds
  • 2 cups Cherry or Grape Tomatoes, halved
  • 1/4 cup Basil Pesto
  • 2 tbsp Balsamic Glaze
  • 2 tbsp Extra Virgin Olive Oil
  • 1/2 cup Fresh Basil Leaves, chiffonade or tor
  • 1 tsp Garlic Powder
  • Salt and Black Pepper to taste

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Lightly grease a baking dish with olive oil.
  3. Pat the chicken breasts dry and season both sides with salt, pepper, and garlic powder.
  4. Place the seasoned chicken in a single layer in the prepared baking dish.
  5. Spread a thin layer of basil pesto over each chicken breast.
  6. Arrange the halved cherry tomatoes around and on top of the chicken.
  7. Drizzle the remaining olive oil over the tomatoes.
  8. Bake for approximately 20 to 25 minutes until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  9. Remove from the oven and place a thick slice of fresh mozzarella on each piece of chicken.
  10. Return to the oven for another 3 to 5 minutes until the cheese melts.
  11. Let it rest for 5 minutes, then drizzle with balsamic glaze and garnish with fresh basil before serving.

Notes

Use high-quality balsamic vinegar for the best flavor. Ensure chicken is of uniform thickness for even cooking.
