Method
- Preheat your oven to 375 degrees Fahrenheit.
- Prepare the peppers by cutting off the tops and removing the seeds and membranes.
- In a large skillet, cook the ground meat over medium heat until browned, then drain excess fat.
- Add diced onions and minced garlic to the skillet and sauté until onions are translucent.
- Stir in cooked rice, half of the tomato sauce, Italian seasoning, salt, and pepper. Let simmer for a few minutes.
- Arrange hollowed peppers in a baking dish and fill each with the meat mixture, pressing down gently.
- Pour remaining tomato sauce over the top of each pepper.
- Cover the baking dish with aluminum foil and bake for 35 to 40 minutes.
- Remove foil, sprinkle mozzarella cheese on top, and bake uncovered for an additional 5 to 10 minutes until cheese is bubbly.
- Let rest for a few minutes before serving.
Notes
Use firm peppers with a flat bottom for stability. You can substitute ground beef with turkey or chicken for a lighter version. Leftovers taste even better the next day.
