  • 2 cups Old-Fashioned Rolled Oats
  • 2 cups Mixed Berries
  • 2 cups Milk (Dairy or Plant-based)
  • 1/3 cup Maple Syrup or Honey
  • 2 Large Eggs
  • 3 tablespoons Melted Butter or Coconut Oil
  • 1 teaspoon Baking Powder
  • 1 teaspoon Ground Cinnamo
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Salt

Method
 

  1. Preheat your oven to 375°F (190°C) and grease a 2-quart baking dish.
  2. In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together the milk, maple syrup, eggs, melted butter, and vanilla extract.
  4. Pour the wet mixture over the dry ingredients and stir gently. Fold in half of the berries.
  5. Pour the mixture into the prepared baking dish and scatter the remaining berries on top.
  6. Bake for 35 to 45 minutes until the top is golden and the oats are set.
  7. Let it cool for 5 to 10 minutes before serving.
