Ingredients
  

  • 2.5 lbs Chicken Thighs or Breasts, bone-in and skin-o
  • 3 large Fresh Lemons, two for slicing, one for juice and zest
  • 4 sprigs Fresh Rosemary, chopped finely
  • 4 sprigs Fresh Thyme, woody stems removed
  • 6 cloves Garlic, minced or smashed
  • 1/4 cup Extra Virgin Olive Oil
  • 2 tbsp Unsalted Butter, melted
  • 1.5 tsp Kosher Salt
  • 1 tsp Black Pepper, freshly cracked
  • 1/2 tsp Smoked Paprika

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Pat the chicken pieces dry with paper towels and place them in a large bowl or baking dish.
  3. In a small bowl, whisk together olive oil, melted butter, lemon juice, lemon zest, minced garlic, and chopped herbs.
  4. Pour the herb mixture over the chicken and rub it under the skin and all over the meat.
  5. Sprinkle salt, pepper, and smoked paprika evenly over the top, and tuck lemon slices and extra herb sprigs between the chicken pieces.
  6. Arrange everything in a single layer and bake for 35 to 45 minutes until the internal temperature reaches 165 degrees Fahrenheit.
  7. During the last five minutes, turn on the broiler for an extra crispy finish.
  8. Remove from the oven and let the chicken rest for 5 to 10 minutes before serving.

Notes

Use fresh ingredients for the best flavor. Marinate the chicken for 30 minutes before baking for deeper flavor. Store leftovers in an airtight container for up to four days.
