  • 3 large ripe bananas, mashed well
  • 2 cups old-fashioned rolled oats
  • 1.5 cups milk of choice (dairy or non-dairy)
  • 2 large eggs, room temperature
  • 1/4 cup maple syrup or honey
  • 1 tsp baking powder
  • 1 tsp ground cinnamo
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 2 tbsp melted butter or coconut oil

Method
 

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Grease a 9x9 inch baking dish.
  2. In a large mixing bowl, mash the ripe bananas until smooth. Whisk in the eggs, maple syrup, vanilla extract, and melted butter until combined.
  3. Pour in the milk and whisk until uniform.
  4. In a separate bowl, mix the rolled oats, baking powder, cinnamon, and salt. Gradually add the dry ingredients to the wet banana mixture and stir until coated.
  5. If adding nuts or chocolate chips, fold them in gently. Pour the batter into the prepared baking dish and smooth the top.
  6. Bake for 30 to 35 minutes or until the top is golden brown and the center feels set. Let it cool for at least ten minutes before slicing.

Notes

Use very ripe bananas for the best sweetness. You can customize with mix-ins like nuts or chocolate chips. Store leftovers in the refrigerator for up to five days or freeze for up to three months.
